Ingredients:
~4 lbs chicken
1 tbsp coconut oil
salt and pepper
chicken seasoning
Directions:
Turn on the sauté option with your Insta Pot and add coconut oil. When the oil heats up, place the chicken down and brown. I move mine around a bit to brown all around. When the chicken is nice and brown, turn it over and place in the trivet that came with your cooker. Add 1/2 cup water on the bottom and add in your seasonings. Close the lid to the cooker. Set to poultry and increase pressure from low to high. 4 pounds of chicken will cook for 24 minutes.
**Note - multiply the number of lbs of chicken by 6 to determine cook time for other sizes.
Enjoy this with some delicious sides like asparagus and quinoa (or mashed potatoes). Save any extra for sandwiches, wraps, or chicken salad for low carb day!
