Shrimp and Chicken

Ingredients:

  • 1/4 cup butter

  • olive oil

  • 1/2 pound chicken

  • 2 lbs of peeled shrimp

  • parsley

  • juice from one lemon

  • zucchini spiralized noodles

Directions:

In a large sauté pan, melt 1/4 cup butter. When warm add shrimp and chicken.  I did two pounds of shrimp, peeled and 1/2 pound of diced chicken.  Sauté until pink then add salt and pepper, plus juice of large lemon and a heaping spoon of minced garlic. Mix and simmer.

In another pan,  while meat sautés, add one large zucchini (spiralized). Sauté with  olive oil and minced garlic. I added half a lemon juice for flavor at  the end with salt and pepper.

Add some chopped scallions and Parmesan cheese at the end before serving. Kids can eat with angel hair.
